Ingredients1.5 kilo chicken wings
1 bulb of garlic
handful little evil green chillies
1 tspn chilli powder
1 tspn ground cumin or pounded seed
1 tspn ground coriandar or pounded seed
1 tspn turmeric
1 tspn salt
lots of black pepper
1/2 cup malt vinegar (none of your mamby pamby wine stuff)
2 tblspns oil
juice of a lemon
1 tspn sugar
oil for cooking
Instructionsmince chillies
run garlic through a cheese grater
chuck every thing except wings in a large bowl (dont use plastic as it will stain it)

take wings & cut off the tips, then cut he wings at the joint.
chuck in the bowl with marinade & mix well.
cover with cling, leave an hour or all day.turn accasionally.

2 tablespoons of peanut oil into a big roasting dish, place wings in uniform lines or you wont have enough room (if not then use 2 dishes)
sprinkle all the bits from marinade over the wings, bit more pepper.

cook for 35 mins @ 190C then turn for another 20 mins.

should be dark & bit crispy, if not it needs another 5 - 10 mins.

Noteslob the lot into a big bowl for the middle of the table & dont forget finger bowls.
