Toor Dal wih Spinach & Carrots

Ingredientstoor dal (arhar dal) 200 gms
turmeric 1tsp.
spinach 300 gms
carrots 1medium
tomatoes 2 large
peas 50 gms
french beans 25gms
ginger 2" pc.
green chillies 2small
nigella or onion seeds (kalonji) 1/4 teaspoon
fennel seed (saunf) 1/2 teaspoon
sugar to taste
salt to taste
cooking oil 1tsp.
fresh corainder leaves
Instructionspressure cook the dal with the turmeric and 6-7 cups water until soft and well done. while the dal is cooking - finely chop the tomatoes, spinach, ginger, corainder leaves & the french beans and grate the carrots.

Heat oil, add the onion seeds and the fennel seeds and when they splutter, add chopped ginger & green chillies and saute for a minute. Then add the chopped spinach, tomatoes, carrots, french beans & peas, sugar and salt and stir for a minute and add the dal. Bring to a poil and simmer for 5 -10 minutes until the tomatoes are soft and mixed with the dal. Take off from the flame and garnish with chopped coriander
NotesIf a thinner consistency is required, please add more water.

Can also add chopped mushrooms, bell pepper, fenugreek leaves, cauliflower florets (small)

can be garnished with small pieces of fried paneer (cottage cheese)
