|Ingredients||2 1/2 lb chicken, skinned and chopped, malt vinegar 4 tablespoon, dark soya sauce 4 table spoons (or to taste), 5 medium sized onions sliced lengthwise and slices separated, 4 green chillies slit lengthwise, garlic cloves 4 fat ones chopped, vegetable oil, 5 table spoons, salt to taste.|
Partly cook on a lowish heat, the chopped chicken with half a tea cup of water, two tablespoons of vinegar, and three tablespoons of soya sauce. Stir the chicken pieces a couple of times so that the chicken becomes whitish evenly. Switch the heat off.
Heat the oil, add sliced onions and fry till transparent, add chopped garlic and slit green chillies and fry till onions are medium brown. Add the chicken and the liquid in it. Add rest of soya sauce, and vinegar and fry till dry checking for salt to your taste.
|Notes||You can change the proportions of onions, garlic, chillies etc to your taste.
We serve it as starters, take it with us on picnics etc. An absolute favourite with my children even into adulthood.
