Ingredients2lbs prawns chopped
20 red chillies
head garlic
salt
2 tablespoon black pepper roughly ground
2 tablespoons sugar
mustard oil
InstructionsChop the chillies and garlic
Cook the chillies slowly in plenty of mustard oil. Add the pepper salt and garlic. Cook until the garlic begins to brown, add the sugar and stir until dissolved. Reduce the heat to low and add the prawns. Cook until any water has evaporated off the dish.

Place in an airtight container and leave overnight.
NotesShut the kitchen door and open all the windows before cooking this. Preferably wear a gas mask, the fumes from the mustard oil are really strong. This definitely needs to mature overnight. It should be used in small spoonfullas as a sambal. It can be stored in an airtight jar in teh fridge for a couple of days. Make sure that teh surfac is always covered in oil.
