Onion Bhaji

Ingredients5 medium onions
4 fresh chilies
4 cloves garlic
1.5 cups of gram flour. (Besan/chickpea)
-cups of rice flour.
Pinch of baking powder
1-tablespoon curry powder
2 teaspoons cayenne pepper (or to taste)
1.5 teaspoons ground Ginger
2 teaspoons ground cumin
1 teaspoons ground coriander
Salt and Pepper
InstructionsTake 1 onion, Garlic and the fresh chills and use food processor to very finely chop (or Just very finely chop by hand)

Sieve the flour into a large bowl and add all the rest of spices and salt and pepper to taste. Also now add the finely chopped onion, garlic and chills. Now add enough water to make into thick batter. (If you add too much water, just add extra besan flour)

Now course chop the rest of the onions by hand

Put onions into large bowl and pour the batter over mixing until the onions are covered.

Now in a deep fryer at about 370` f. (or wok works well) Spoon a small amount of battered onions into the fryer, not more than 4 lots at one time (adding too much will cool the fryer too much). And fry until light golden brown.
Remove from the fryer and put aside until later.

Just before you serve them put them through the deep fryer again until deep golden brown.

Serve with your favorite chutneys and or Riata
