Mushroom Curry     

DescriptionThis is a good mushroom Curry. It can be used as a side or main dish.

Ingredients8oz Mushrooms sliced
3-4 cloves garlic
1/2 onion chopped fine
1 teaspoon Cumin
1 teaspoon Ground Coriander
1 teaspoon chili powder ( more if you like it hotter )
1/2 teaspoon of Tumeric
1/2 teaspoon salt
1 tablespoon of Tomato paste
2-3 tablespoons of chopped fresh cilantro ( coriander leaves or chinese
parsley )
InstructionsSaute onion for 2-3 minutes in 3 tablespoons of oil.
Add garlic and saute for 1 minute.

Add Cumin, Coriander, Chili and Tumeric. Bhoona or stri fry over medium heat for 4-5 minutes. Add a tablespoon of water if the mixture becomes to dry.

Add the mushrooms, Tomato paste and salt. Stir. Add 3 tablespoons of water, lower the heat to a simmer. Cover for 10 minutes.

Remove from heat and add chopped fresh cilantro ( dont leave out adding the cilantro )
