Ingredients2 pounds chicken wings, skinned
4 Tbsp, cumin
10-15 green chillis, finely chopped
4 cloves garlic, finely chopped
butter
fresh coriander, finely chopped
half a lemon
1 tbsp garam masala
1-2 tsps salt
InstructionsFry butter and cumin seeds until they change colour slightly and brown.

Add chillis and garlic and salt and cook on low heat for 3-5 min

Add chicken and cook well

10 minutes before serving up add garam masala, lemon juice and fresh coriander and stir well
NotesThis is a well known indian/east african dish served up in all the best indian men private member clubs in london. Known as biting chicken this goes well with the kenyan beers, white cap and tusker.
