Ingredients3 sweet peppers
5 cloves of garlic
3 tomatoes
6 spring onions
1/2 large onion
curry paste
dried crushed chillies
madras curry powder
chillie powder
18 eggs
8 turkey or chicken breasts




Instructionshard boil the eggs
clean and chop all the veg into small pieces,
put in a large pan
chop the meat into chunks and add to pan,
add paste and twice the amount of water (to paste)
cook slowly for about 30 mins adding curry powder, chillie powder and dried crushed chillies to taste
peel and half eggs, removing the yolks
add the egg whites to pan,
cook for another 10 mins
serve with rice

NotesThe use of eggs comes from an old indian friend of the creators, it is used over there as a meat supliment and tastes phenominal, fresh veg ingredients should always be used, i use a sweet pepper of each colour (red, yellow and green) i have eaten many curries and this one is the best, its a full meal not just meat and suuce (like you get in most crappy curry houses)
