Ingredients3-4 chicken breasts
2 large onions
mushrooms
Curry powder (I use madras)
1 large tin of tomatoes
3-4 cloves of garlic
1 chicken stock cube
(I use a heaped teaspoon of pataks balti paste)
large pinch of chilli powder.
InstructionsDice chicken and fry in 2 tablespoons of oil
When chicken is just starting to lightly brown add finely chopped onions
And crushed garlic if the pan starts getting a bit dry add a splash of hot water (NOT OIL)
Cook until onions start to go soft add sliced/diced mushrooms and 3 heaped teaspoons of curry powder and the tin of tomatoes
Cook for 10 mins
Then add pint of chicken stock (made with stock cube)
Stir in Pataks balti paste

let the curry reduce
Stir occasionally
Approx 30 mins

NotesOther things to add to taste
Green lentils (put them in early they take a while to cook)
Pineapple
Raisins
Coconut
Plain yoghurt small tub stir in just before serving
