Ingredients3 med. potatoes
3 med. tomatoes
half cup snow peas, cut but uncooked
4 oz Red Curry Paste (Measri brand)
1/2 inch Masman curry paste (squeezed from the tube)
20 ounces coconut milk (Asian Taste brand - creamy and thick)
juice of one lemon
few slices ginger
3/4 bulb garlic
1 1/2 brown onions
1/4 cup olive oil
five serrano chilis, including seeds
4 ounces tomato paste
2 inches lemon grass
pepper, dill weed, salt to taste
InstructionsSlice and boil potatoes 15 minutes or so as you start to slice everything. Don
NotesThe uncooked snow peas add a delightful crunch. The Asian Taste brand cocnut milk is thick, not watery like some, hence the finalsauce is thick enough to eat with chopsticks.
