Creamy Green Curry

Ingredients700g chicken breast
2 large onions
4 large mushrooms
3 briquettes of frozen spinach
1 tbls sesame oil
1-2 tsp clear honey
1/2 tsp to 1.5 tsp hot chilli powder depending on you
1 tsp heaped, tumeric
1 tsp heaped, ground cumin
1 inch chopped fresh ginger
4 garlic gloves crushed
good bunch of fresh corriander, chopped
2 fresh chillis for volcanic curry
leave out if you require mild
1 can of coconut milk
200 ml coconut cream
1/2 squeezed lime
pinch of salt
InstructionsFry the onion ginger and garlic in the sesame oil for a few minutes, add salt, mushrooms, and chicken till chicken is sealed.
Add the 3 spices and fry for a further 2 mins
pour in the full can of coconut milk and simmer
The sauce, after about an hour, will start to thicken this is when you add the defrosted spinach and the lime juice and corriander, simmer for a further 10 mins
add the coconut thick cream and honey simmer till the desired consistancy.
Take it you all know how to boil rice, I use basmati and wild rice
YOU CAN ADD THE FRESH CHILLIS WHEN YOU LIKE remember if they go in at beginning the whole curry will get hot,near the end and you will get the heat if you get a chilli
