60 pepper party-feast

Ingredients4 tablespoons veg / sunflower oil
1500g chicken breast
2 large bulbs of garlic
2 lumps of ginger, (half the ammount of garlic)
60 green chili peppers
half a jar of madrass curry paste
3 green peppers
2.5 large onions
3 tablespoons chili powder
2 tablespoons mustard powder
1 tablespoon cumin powder
2 tablespoons ground almonds
2 tablespoons garam masala
2 teaspoons corriander seeds
2 teaspoons cumin seeds
2 teaspoons mustard seeds
2 teaspoons fennel seeds
2 teaspoons onion seeds
1 large bunch of corriander
2 tins of tomato soup
250g cherry tomatoes
salt to taste
Instructionstools - wok, blender, slow cooker, hob.

prep 01 -

1) roughly chop 30 chilis, half an onion, 1.5 green peppers
2) cut chicken into 1.5 inch chunks
3) peel, chop, then blend 1 bulb garlic + half the ginger to a paste

method -

1) heat 2 tablespoons oil in wok
2) fry half the seeds till they crackle
3) add garlic + ginger paste, stir fry for 30 seconds
4) add 2 tablespoons curry paste, 1.5 tablespoons chili powder,half tablespoon cumin powder,
add tablespoons of water till a nice thick consistency. stir for 30 seconds
5) add chilis, peppers, onion + 1 tin soup, stir fry for 5 mins
6) add chicken, stir fry till sealed + white
7) bung the lot in slow cooker on low

prep 02 -

1) roughly chop 20 chilis, 2 onions, 1.5 green peppers
2) peel, chop, then blend 1 bulb garlic + the other half of the ginger to a paste

method -

1) follow steps 1 - 5 above
2) put half in slow cooker, blend rest to a smooth sauce, then add to slow cooker
3) leave for 1 hour, then add chopped corriander, halved tomatoes + garam masala
4) leave for 10 mins, salt to taste, munch with rice and nan bread.
Notesthis curry is as good as any carry-out i have tried, and is hot enough to satisfy all us chili fanatics. Let me know how you get on. any suggestions are appriciated. cheers - pooko.
